Wow, I have been in this business for many, many years and I am continually amazed and surprised but the lack of knowledge managers have about maintianing a restaurant. The last restauant I took over was only a 4 month old restaurant and it was in worse condition than my previous restaurant that was open for a year and a half. It was dirty, things were broken and falling apart.
Although it is a lot of work, it is not difficult maintain a restaurant. All you have to do it keep it clean and do not let maintenance issues build up. Fix things before they break and once they are broken, fix them yourself if possible, or have them fixed by a proffessional. It is really that simple.
Unfortunatley the difficult part is getting your fellow managers to communicate when they see something in need of repair.
